– 500 gr of boiled chickpeas from a pot – 150 gr of bacon ribbons – 2 medium peaches (best ripe) – 1 medium sweet onion – 1/4 iceberg lettuce – Olive oil – Salt
We wash the lettuce well, cut it into a thin julienne and let it drain.
Next we peel the onion and cut it, peel the peaches, bone them and cut them into cubes and wash the chickpeas well.
We cover the bottom of a frying pan with the oil, when it is hot add the onion and salt and cook over medium heat until the onion begins to become transparent. Next we add the bacon and the peach cubes and cook them until the bacon begins to brown. Drain the chickpeas well and add them to the pan, cook for about 5 minutes and add the lettuce, stir everything well so that all the ingredients are integrated and cook for about 2 more minutes over low heat.
