Vegetable drowning

This is one of my father’s favorite dishes. The truth is that it is very good and it also serves to finish off all the vegetable remains that are left in the fridge. Today I have used what I had, but you can put what you want, it admits any combination of vegetables; peas, spinach, chard, asparagus … What you like best.

Ingredients:

  • A small sweet onion
  • An Italian green pepper
  • Half red pepper
  • Two artichokes
  • Two potatoes
  • Two carrots
  • A leek
  • Half aubergine
  • Six mushrooms
  • A small zucchini
  • A handful of green beans
  • A garlic clove
  • A bay leaf
  • A cube of avecren
  • parsley

Elaboration:

We wash and chop the onion, garlic and green pepper in brunoise and poach it in a saucepan with olive oil. We wash and chop the rest of the vegetables, we incorporate them little by little and we fry them well over low heat so that they are made little by little. First we add the hardest vegetables: carrots, eggplant, green beans, artichokes … and finally the potatoes and the mushrooms. Cover with water and add a little chopped parsley and the avecren previously crushed in the mortar. Let it cook until the vegetables are very tender.
