I love to do skewers, since it gives free rein to my imagination, since we can make them with different ingredients: meat (chicken, beef, veal), sausages, fish, seafood, vegetables … etc. that’s why today I bring you a recipe for skewers of pork with vegetables.
The preparation of the skewers is very simple, but it is much tastier, if the meat that we are going to use is marinated for a few hours.
This technique of marinating the meat is used first to flavor the meat with the spices and then as we are going to cook it on the grill or griddle, the liquid that we have added makes it not dry.
This marinade can vary according to the taste of each one, I have had it macerating for a maximum of 24 hours. The longer the meat acquires more flavor, I have removed it from time to time.
I have prepared two types of skewers: one only with meat and vegetables and the other more consistent with sausage and chorizo but also with vegetables.

Ingredients of pork skewers with vegetables.
For 4 people
4 wooden skewers
300 gr of lean pork cut into cubes
Half an onion
Half green pepper
For the meat marinade
2 garlic cloves
3 tablespoons of oil
3 tablespoons of white wine

Crush the garlic and parsley in the mortar
We put the lean pork in a deep dish, add a pinch of paprika, salt, garlic and parsley, a little thyme, a pinch of oregano, wine and oil.
We mix. Cover with plastic wrap and put it in the fridge for 6 hours to a maximum of 24 hours.
Assembling the skewers
We wash and cut the green pepper and zucchini into pieces. Peel the onion and cut it into pieces as well.
We cut the chorizo and sausage into pieces of approximately one centimeter

We insert on the skewer a piece of zucchini, another piece of meat, pepper, meat, onion, meat, like this until the end of the skewer

We insert on the skewer a piece of zucchini, another piece of meat, pepper, sausage, onion, meat, zucchini, chorizo, pepper meat, sausage onion, zucchini, meat, like this until the end of the skewer.
We put the skewers in the iron pan, adding the marinade oil on top and let them cook.
We can also make the tomato cut in half.
Presentation of meat skewers
We place the skewers and serve them with grilled tomato and slices of toasted bread smeared with garlic. Add a little oil on top of the skewer.
