Roasted Chicken and Pine Nut Croquettes

Ingredients (12 units):


– 350 gr of roasted chicken
– 3 medium eggs
– Bread crumbs
– 1 C. s. pine nuts
– The juice of half a lemon
– A teaspoon of chopped parsley
– A small garlic clove (optional)
– Oil
– Salt


Elaboration:


Chop the roasted chicken well and add it to a bowl.


Add the eggs, pine nuts, lemon, parsley, minced garlic (optional) and a pinch of salt to the bowl.


Then we add breadcrumbs to the bowl and knead the mixture until we have a homogeneous dough (it must be a little wet, since if we put too much breadcrumbs the croquettes will be very dry after frying them).


When we have our dough ready, we take small portions and knead them to give them the shape of medium balls.


In a small saucepan we add oil in sufficient quantity to cover the croquettes, once it is hot we add the croquettes, we fry them until they are golden, turning them from time to time so that they brown evenly.


Once they are golden, we remove them from the saucepan and place them on kitchen paper to remove the excess oil.


We can serve them accompanied by Greek yogurt sauce and a little assorted salad.


These croquettes are also great if instead of roast chicken we use any meat that we have left over from a stew.
