The rails or cheeks is the jaw or cheek of the animals (beef or pork) that I am going to prepare roasted with potatoes.
In my case I have bought them from pork, it is cheaper and very juicy, we can find it with or without bone. In my case I like to buy them with bone if I am going to roast them. Otherwise if I make them in sauce, I buy the boneless rails.
The recipe for baked racks is hardly complicated, as I always hope you like it.
Ingredients for the roasts with potatoes 4 people:
4 bone-in pork rails
1 kg of potatoes
Two garlic cloves
In a baking dish, line it with the vegetable paper, put the potatoes that we have previously peeled and cut into thin slices. On top we put the lanes. We add the salt, the minced garlic and the parsley, which we have previously cut into pieces. A generous amount of oil and water to cover the potatoes.
We put in the oven at 250º and let it go, checking that the potatoes do not run out of water at first and burn us, and water the rails with their own juice. We turn the lane around. We let them finish.
Once they are ready, I like to gratinate them for a few minutes so that they are more crispy.
I usually accompany the lanes with a salad.
