Recipe of rabbit with tomato with a sauce of green pepper and onion.
I have an unconditional fan: my mother. She is a lady with an already quite advanced age and, of course, she does not find out much about the internet, especially when I tell her that I have a blog of cooking recipes and that I know a lot of people on social networks. For her it is a whole world.
Occasionally I ask him and consult the cooking recipes or I go home and prepare something that I later published on the blog.
The other day she was the one who gave me the idea of the rabbit in tomato sauce. It is a recipe so traditional and from each house, that today I bring you my way of doing it.
Ingredients for the rabbit with tomato
1/2 green pepper
1 clove garlic
1 can of tomato of 300 gr.
1 glass of white wine
Sweet or spicy paprika (to taste)
Preparation of the rabbit with tomato
We put in a frying pan a bit of oil. When the oil is hot, add the rabbit that we have previously seasoned.
We brown it on all sides, it will be raw inside, but nothing happens since it will be done with the sauce. We reserve in a casserole.
We wash the green pepper. Peel the onion and garlic. Chop the onion, green pepper and garlic.
In the same pan that we have fried the rabbit, add the onion, garlic, green pepper. If there is a lot of oil, it is removed. We season and let it be done. Add the paprika. We mix. We put the sofrito in the saucepan where we have the rabbit.
Add the wine and let the alcohol evaporate for about two minutes.
Añadimos el tomate. Sazonamos y dejamos que se haga entre 10 a 15 minutos a fuego medio o hasta que este el conejo.
