Today I bring you a recipe for rabbit in almond sauce with white wine, usually at home I always prepare the rabbit in tomato sauce, but remembering the flavors of childhood I remembered this recipe.
The almond sauce has always liked at home, it combines perfectly with chicken or meatballs.
The rabbit has a very rich and tasty meat, with little fat and low cholesterol, making it an ideal meat for diets.

For 4 people
1 chopped rabbit
20 raw almonds
1 small glass of white wine or 100 ml
2 cloves of garlic
Some fresh parsley leaves
Ground black pepper
Preparation of the rabbit in almond sauce
Season the pieces of rabbit with salt and pepper. We flour it. In a frying pan we put olive oil, let it heat and fry the rabbit several times. We reserve it in a casserole.
The rabbit will be a little raw inside, we will finish making it with the sauce.
Chop the almonds, garlic cloves and parsley in the mortar.
In the same pan, which we have fried the rabbit, we add the chopped almonds, garlic and parsley. If we see that there is a lot of oil it is removed, before adding the chopped.
We mix it, add a tablespoon of flour, mix it well, and add it to the saucepan where we have reserved the rabbit.
Add the white wine and water enough to cover and finish making the rabbit. We check for salt. We let it cook between 8-10 minutes.
We set up and eat.
Tips: the sauce thickens slightly as it cools. But if you want it thicker, remove all the pieces of rabbit, heat the sauce, dilute a teaspoon of flour in a little water, mix well so there are no lumps and add to the saucepan, mix well . Rabbit is added again
