Ingredients for the prawn skewer with quail egg with vegetable vinaigrette

For 4 skewers:

8 cooked and peeled prawns or prawns

8 olives stuffed with anchovy or pitted

4 quail eggs

1/2 tender onion

1/2 green pepper

2 canned piquillo peppers or half canned bell pepper.

4 skewer sticks or long toothpicks

For the vinaigrette:

Chop the green pepper, onion and red peppers very finely, and add a little salt and a drizzle of vinegar and oil, mix it and let it marinate for 1/2 hour.

We insert in the toothpick, the olive, then the cooked and peeled prawn or shrimp, then the quail egg that we will have previously cooked, then another prawn or shrimp and finally the olive. So we will continue with the rest of the skewers.
