For today I bring you some potato balls stuffed with chorizo.
I had wanted to do them for a long time, I have seen them countless times in bars, with different fillings: meat, tuna or chorizo.
The recipe itself is very easy, being ideal for those cooks who are starting to make their first steps in the kitchen.
The recipe of potato balls stuffed with chorizo , It is cheap, since you only need potato, a piece of chorizo, egg and breadcrumbs.
The potato I have selected is red skinned, because it is a potato that does not absorb water when cooked, as it happens with the white or mona lisa.
Regarding the chorizo, I have cooked it with white wine so that it would shed all the fat it might have.

Ingredients for the chorizo stuffed potato balls:
3 medium red skinned potatoes
A piece of chorizo
1/2 glass of small white wine
Preparation of the potato balls:
We peel, wash and cut the potatoes to bits. We cook them with water and salt. Once cooked, drain the potatoes and put them in a deep dish and mash them with a fork until making a puree.
Meanwhile, cut the chorizo into slices and put it in a saucepan with the wine, let the chorizo release the fat and soften it, for about 10 minutes over medium heat.
We take out the chorizo and cut it into smaller pieces.
We put a little puree in our hand and flatten it, put a little of the chopped chorizo on top and give the mash the shape of the ball with our hands.
You can make the balls more or less large, I got about 9 balls and they were the size of a meatball.
We pass the balls through the beaten egg with salt and the breadcrumbs. Fry in abundant oil. We put the potato balls on absorbent paper for a few minutes.
It can be eaten as an aperitif, accompanied by a salad….
