This recipe was taught by my grandmother to my mother. He told her that she had been taught by her mother-in-law, that is, my great-grandmother. It’s okay to keep the good stuff.
It is made with young peas. Now, we are fortunate to have tender peas year-round, without having to wait for the first of the season in spring. For me, the best are the frozen ones. We can use any fine, superfine, baby or very tender pea. I use Mercadona’s. They come out great.
- 500 gr of frozen peas
- An Italian green pepper
- ½ sweet onion or chive
- A few cubes of ham
- A clove of garlic and parsley
Fry the finely chopped onion and garlic, when they are, add the finely chopped green pepper to the sauce. Add a few cubes of Serrano ham and then add the peas and sauté well. We put a little water and the chopped fresh parsley and we rectify with salt. We let it cook a little and enjoy.
Just before serving, a couple of beaten eggs can be incorporated, stirring until slightly curdled. Another option is to fry one or two eggs per person. This is how I like them the most. They are delicious!!!
The onion and the pepper give them a special sweetness. It is very important that they are small and tender peas, especially for children to like them.
