orange sponge cake

Ideal to accompany a coffee, especially in these cool afternoons.


  • 250 gr of flour
  • 200 gr of butter
  • 150 g of sugar
  • An envelope of vanilla sugar
  • Medium envelope yeast powder
  • 3 eggs
  • An orange
  • A lemon
  • A little icing sugar
  • a pinch of salt


We heat the butter in the microwave and beat it with the rods until it is frothy. Gradually add the sugar, the vanilla sugar sachet, the eggs and the salt.

We are incorporating the flour sifting it with a strainer and then we add the yeast, the juice and the lemon zest.

To prevent the cake from sticking I have discovered a fantastic non-stick spray with which we spray the mold Bake Easy! Wilton’s. They sell it in El Corte Inglés and it is very comfortable. If we do not have it, we use the traditional method. We smear the mold with oil or butter and sprinkle with flour.

Carefully pour the mixture into the mold (I used a 26 cm diameter round one) and put it in the oven at 200ºC for 20 minutes.

We take it out of the oven and sprinkle it with the orange juice.

Once cold, remove it from the mold and sprinkle with icing sugar and the orange zest.
