A quick, easy second course. It is very useful because it always works well and can be done overnight.
- One Kilo of pork loin tape, better it is high loin, it is juicier
- A small onion
- A garlic clove
- A large carrot or two small ones
- The juice of two oranges
- A little Brandy (75ml)
- A laurel
Season and brown the loin and reserve. Poach the julienned onion together with the garlic and then sauté the sliced carrots. We put everything in the pot with the bay leaf and add the brandy, let the alcohol evaporate and add the orange juice. We cover the pot and let the two rings rise for 8 minutes.
We crush the vegetables removing the bay leaf and we have a thick orange sauce, very rich to accompany the meat. It is very good with mashed potatoes and of course with a good salad.
Pork is a very succulent and easily digestible meat, highly recommended for children due to its high protein content. It provides vitamin B6, B12 and minerals such as iron, zinc, phosphorous, magnesium and potassium. On the other hand, the loin only has 3% fat.
