These gnocchi stuffed with cheese are a delicious potato gnocchi version.

Ingredients for the gnocchi stuffed with cheese with Neapolitan sauce:

  • 1 Kilo of potato.
  • 300 grs. Of flour.
  • 1 egg.
  • 1 teaspoon of baking powder.
  • 150 grs. grated parmesan cheese.
  • 500 grs. of hard cheese or mozzarella.
  • Salt.
  • Pepper.

For the Neapolitan sauce:

  • 1 onion.
  • 2 cloves of garlic.
  • 8 or 10 fresh basil leaves.
  • 1 can of tomatoes.
  • 2 teaspoons of sugar.
  • Olive oil.
  • Salt.
  • Pepper.

Preparation for gnocchi stuffed with cheese with Neapolitan sauce:

For the Neapolitan sauce:

  1. Cut the onion and garlic into small squares.
  2. We put a frying pan on the fire with a little oil and when it is very hot add the onion, the garlic and let them take a light golden color.
  3. Add the tomato sauce, chopped fresh basil, a little salt, a pinch of sugar, and let it boil a little.

For the gnocchi:

  1. Place a pot on the fire with plenty of water, add the potatoes, a little salt and cook until soft.
  2. Remove from the heat and mash the potatoes, let cool.
  3. In a bowl we place the puree, add the lightly beaten egg, baking powder, two handfuls of grated cheese, salt and pepper. Mix all the ingredients to form a dough.
  4. We cut the cheese into small squares and reserve.
  5. We take a little of the potato dough, crush it a little and place a cube of cheese in the center, close it as if it were a pie, and with the help of our hands we give it a round shape. We repeat this step until we finish with the dough.
  6. We see arranging the gnocchi on a tray sprinkled with flour.
  7. We place a pot of water to boil with a little salt and we cook the gnocchi. They will be ready when they float to the surface.
