These glasses of yogurt and red berries are a delicious dessert and very easy to make. We can use strawberries, blueberries, fresh or frozen blackberries. On this occasion I have used frozen fruits. The ones that Mercadona sells are very good.
- 6 Greek sugary yogurts
- Vanilla extract
- 300 gr of red berries
- 100gr of sugar
- Juice of half a lemon
- 3 teaspoons cornstarch
- 3 teaspoons cold water
To make the compote, mix the cornstarch with the water until there are no lumps and reserve.
We put the fruit, the lemon juice and the sugar in a saucepan. When it comes to a boil, we lower the heat. Let it cook for about 10 minutes. At the end we add the diluted cornstarch. This will give it a special shine. We remove from the fire and let it cool down. If we mix it hot, the compote mixes with the yogurt and the layers are not as defined.
We mix the Greek yogurt with a teaspoon of vanilla extract.
Fill the cups alternating fruits and yogurt. you have to put them in the fridge until they are going to be served.
We can put more layers, but always finishing with the compote or with fresh fruit. It can be sprinkled with icing sugar just before serving.
