German Potato Salad (Kartoffelsalat)

Ingredients (4 people):
– 5 large or 9 small potatoes
– 50 gr of German pickles
– 1/2 small sweet onion
– 5 smoked cooked German sausages
For the sauce:
– 200 gr of mayonnaise
– 2 tablespoons of Greek yogurt
– 3 tablespoons of the gherkin liquid
– 1 teaspoon of oregano (optional)
– 1 pinch of salt
To make the sauce, add the mayonnaise, yogurt, pickle liquid, oregano and a pinch of salt to a bowl, carefully stir until all the ingredients are well integrated and reserve in the fridge.
We wash, peel the potatoes and cook them in salted water. In a pressure cooker it will take about 10/12 minutes. To cook them in a better saucepan, cut them into cubes, add salt, cover them with water and cook over medium heat for 1/2 hour or until tender.
Once cooked, place them well drained in a bowl and let them warm. Once they have cooled down a bit, cut them into slices of approximately one centimeter and reserve them.
In a saucepan we add water, once it is boiling we turn off the fire and add the sausages to them and leave them in the hot water for 5 minutes and after that time drain them well and let them cool down a bit. Once they have cooled, cut them into thin slices and add them to the potato bowl.
Next we cut the finely julienne the onion and the gherkins in slices, add everything to the bowl and add the sauce. We remove carefully so that the potatoes do not break much until the sauce is well integrated.
It can be served cold or warm.
