Eggplant, Goat Cheese and Fig Jam Montaditos

 

Ingredients (4 people):


– 2 aubergines
– 200 gr of goat cheese
– 100 gr of fig jam
– 8 c. s. of honey
– Extra virgin olive oil
– Salt



Elaboration:


We preheat the oven 220º heat up and down.


We wash the aubergines well and cut them into slices about a centimeter thick. We place them on baking paper and sprinkle them with a little olive oil and salt to taste. Bake for about 15 minutes or until golden.


While the aubergines are cooking we cut the cheese into slices of more or less the same thickness as the aubergines.


Once the aubergines are baked, we take them out of the oven and place a slice of aubergine on a plate, on it we add a teaspoon of fig jam and a slice of goat cheese. We repeat the same operation until we reach three heights and add a tablespoon of honey to our montadito.


We serve hot.
