Ingredients (4 people):


– 500 gr of couscous
– 250 gr of lamb ribs
– 250 gr of sweet pumpkin
– 2 zucchini
– 12 pitted dates (optional)
– 50 gr of butter at room temperature
– Water
– Olive oil
– Salt
– Yogurt and honey sauce


Elaboration:


We hydrate the couscous in a bowl with boiling water and salt to taste, there should be one centimeter of water above the couscous, cover the bowl with plastic wrap or a flat plate and reserve.


While we hydrate the couscous, wash the pumpkin and zucchini well, cut the zucchini into cubes, peel the pumpkin and cut it into cubes, cover the bottom of a pan with oil, when it is hot add the vegetables, a pinch of salt and cook them well until golden, reserve.


In the same oil as the vegetables, cook the lamb with salt to taste until golden brown.


While we cook the lamb, we shelled the couscous that we had reserved with a large fork and we add the butter, we mix carefully. Once the couscous has absorbed the butter, we transfer it to a platter and add the vegetables, the lamb and the dates, cut in half, spread the yogurt sauce on top and serve hot.


We can replace the pumpkin and zucchini with any vegetable that we like best, it would be very good with eggplant, mushroom or onion.
