Cooking Recipes for Everyone: Vegetable Pudding

Ingredients (4 people):
– 1 kilo of chopped vegetables
– 1 onion
– 2 garlic cloves
– 4 eggs
– 1 herb and a spice to choose
– Olive oil
We put water in a saucepan with a little olive oil, a handful of salt and bring to a boil. Next we add the chopped vegetables and cook them for about 20 minutes or until they are tender.
We cover the bottom of a frying pan with a little olive oil and make a sauce with the finely chopped onion and the garlic.
In a bowl, mix the cooked vegetables (without any water), the onion and garlic sauce, the beaten eggs, the salt and the seasonings.
We line an elongated mold with vegetable paper, or with butter and breadcrumbs, and fill it with the previous mixture.
Bake 15 minutes at high power and 30 minutes at medium power. We prick with a wooden toothpick and if it comes out clean our pudding will be done.
It is better to unmold it and break it when it is cold so that it does not break when cut.
