Spinach with Camembert Cheese

 

Ingredients (4 people):


– 1 kg of spinach
– 2 medium sweet onions
– 3 c. s. raisins
– 3 c. s. pine nuts
– 400 ml of liquid cream for cooking
– 8 servings of Camembert cheese (250 gr)
– Tomato jelly
– 2 eggs
– Bread crumbs
– Olive oil
– Salt
– A pinch of nutmeg (optional)


Elaboration:


We wash the spinach well and let it drain for a few minutes. Peel the onions and cut them into julienne strips.


We cover the bottom of a pan with olive oil and when it is hot add the spinach, onions, raisins, pine nuts and a little salt. Cover the skillet and cook over low heat until the onion has browned and is golden brown.


While the vegetables are cooking we crack the eggs in a bowl and beat them well, add the cheese portions, we impregnate them well with the egg, we pass them by breadcrumbs and we fry them in abundant hot oil. When they have browned, remove them from the pan and reserve them on kitchen paper to remove excess oil.


Once the spinach and onion are cooked, add the cream and the nutmeg to the pan and cook over high heat for a few minutes so that the cream reduces a little.


To assemble the dishes we put a base of spinach, on top we place 2 portions of Camembert, a little jam and serve.


We can substitute tomato jam for whatever we like best (peach, blueberry, strawberry …).
