– 9 medium potatoes
– 3 boiled eggs
– 3 small cans of tuna
– 200 gr of mincemeat in vinegar variants
– 150 gr of olives stuffed with anchovies
– 6 piquillo peppers
– 600 gr of mayonnaise
We wash the potatoes well and peel them. To cook them we put them in the pressure cooker, add a handful of salt and cover them with water, cover the pot and cook them for 10 minutes after the steam has risen. If we do not have a pressure cooker we can cook them in a casserole but we will cut them into cubes so that they cook before, in the casserole they will take about 20/25 minutes to cook.
While the potatoes are cooking we put the eggs to cook, for this we put them in a saucepan, cover them with water and cook them for 10 minutes (counted from when the water begins to boil).
When the potatoes and eggs are cooked, let them cool.
Once cold, cut the potatoes into cubes and place them in a large bowl. Next we chop the eggs, olives and peppers and put them together with the potatoes.
Drain the tuna and mincemeat well and place it in the bowl as well.
Once everything is in the bowl, stir to mix, but carefully so that the potatoes do not puree.
Next we add the mayonnaise, reserving a little to cover the salad once finished and we always stir carefully so that the mayonnaise integrates well with the rest of the ingredients.
Once everything is well mixed, we will pass the salad to a source, smooth the surface and cover it with the reserved mayonnaise.
We can decorate it with broken olives, strips of pepper or hard-boiled egg.
