Roasted Pepper Salad

Ingredients (4 people):


– 2 red peppers
– 2 yellow peppers
– 1 eggplant
– 1 onion
– 2 ripe tomatoes
– 1 green pepper
– 1 clove garlic
– 12 green olives
– 12 black olives
– Extra virgin olive oil
– Salt


Elaboration:


We wash the vegetables and dry them well, then cut the eggplant and onion in half. We place all the vegetables in a dish suitable for the oven and bake them at 200º for half an hour, turning them from time to time until they are golden brown on all sides.


Once they are well cooked, we take them out of the oven and cover them with a kitchen cloth to make them sweat and thus be able to peel them better.


When they have cooled, peel them carefully, removing all the seeds and removing the strands that are normally inside the peppers with scissors. It is better to peel them inside the same source in which we are going to leave the salad to take advantage of all the juice they release while we peel them.


Next we cut the vegetables into not very small pieces, add the garlic in sheets, the olives and season with olive oil and salt to taste.


It keeps very well in the refrigerator, but we must take it out about half an hour before we go to consume it.
