Ingredients (4 people):

– 500 gr of pasta
– 4 medium free-range eggs
– 400 gr of thick cooking cream
– 4 slices of smoked salmon
– 200 gr of brie cheese
– 4 teaspoons of caviar substitute
– 2 tablespoons of olive oil
– Salt
– Water


Elaboration:

In a large saucepan, bring the water to boil with the 2 c. s. olive oil and a handful of salt.

When it begins to boil add the pasta and lower the heat, leave to cook over medium heat for 10 or 12 minutes depending on the cooking point that we like for the pasta. After this time, drain it well and put it back in the saucepan.

In a bowl we crack the eggs, add a little salt, add them to the saucepan with the pasta and stir over a very low heat carefully until they spread all the pasta well and set.
When they have set, add the cream, turn up the heat and continue stirring carefully for about 3 minutes.

After this time, we distribute the pasta in 4 bowls, add the brie cheese without crust and diced (better if we cut it fresh from the fridge, when it is still cold) and a slice of smoked salmon in strips per bowl.

Decorate with a teaspoon of caviar and serve warm.
