Cooking Recipes for Everyone: Pasta with Italian Basil

Ingredients (4 people):
400gr of spaghetti or noodles
15 fresh basil leaves
15 pitted black olives
50 grams of grated parmesan cheese
virgin olive oil
To cook the pasta put in a pot half a liter of water with a handful of salt and a tablespoon of oil. Add the pasta and cook over medium heat for fifteen minutes.
To make the tomato sauce, boil the tomatoes for ten minutes. Once cooked, peel them, remove the seeds and cut them into pieces. To more easily peel the tomatoes before putting them in the water we will make a cross with a knife at the base.
Add a little salt and let them drain in a strainer for ten or fifteen minutes.
While the tomatoes are resting, wash and dry the basil leaves and cut the olives into slices.
Mix the chopped tomato with a little salt and pepper in a bowl with the mixer, gradually incorporating the oil until it emulsifies.
Once the sauce is done add it to a pan together with the olives and the basil leaves and heat a little over medium heat.
ANDdrain the pasta, mix with the sauce and pour the grated cheese on top.
Plate and decorate with some fresh basil leaves and serve hot.
