Cooking Recipes for Everyone: Eggplant Black pudding

Ingredients (4 people):
-500 gr of unpeeled aubergines
-200 gr of onion
-25 gr of pine nuts
-2 tablespoons of oregano
We wash the eggplants, peel the onions and chop them as small as possible (the smaller we cut both things, the less time it will take to cook).
Next we cover the bottom of a frying pan with olive oil, when it is hot we incorporate the aubergines, onions, oregano, pine nuts, salt and pepper, cover and cook over medium heat, stirring occasionally for about 25 min. or until we see that the mixture has been homogeneous.
It can be served cold or hot, as a garnish or as a starter accompanied by toast.
