– 250 gr of crumbled desalted cod – 3 medium eggs – Bread crumbs – 1 C. s. pine nuts – The juice of half a lemon – A teaspoon of chopped parsley – A small garlic clove (optional) – Olive oil – Salt
Add the crumbled desalted cod to a bowl.
Add the eggs, pine nuts, lemon, parsley, minced garlic (optional) and a pinch of salt to the bowl.
Then we add breadcrumbs to the bowl and knead the mixture until we have a homogeneous mass (it must be a little wet, since if we put too much breadcrumbs the meatballs will be very dry after frying them).
When we have our dough ready, we take small portions and knead them to give them the shape of medium balls.
In a small saucepan we add oil in sufficient quantity to cover the meatballs, once it is hot we add the meatballs, fry them until golden, turning them from time to time so that they brown evenly.
Once they are golden, we remove them from the saucepan and place them on kitchen paper to remove the excess oil.
We can take them as an aperitif or incorporate them into a stew.
