Cooking Recipes for Everyone: Chickpea Ratatouille

Ingredients (4 people):
-2 large red peppers
-1 small eggplant
-150 gr of sweet pumpkin
-300 gr of cooked chickpeas (I put in a pot)
-350 gr of fried tomato (best homemade)
We wash, clean the peppers well inside and cut them into squares, we do the same with the zucchini, the eggplant and the pumpkin (I usually leave the zucchini and the eggplant with the skin).
In a frying pan we put a little olive oil, when it is hot we add the chopped vegetables, add salt to taste and cook them uncovered so that the vegetables do not cook and stir occasionally with care.
When the vegetable is tender, we add the cooked chickpeas (if they are from a pot, we must first drain them and wash them well) and continue cooking for a couple of minutes more.
Then remove the excess oil from the pan, add the fried tomato and mix well with the vegetables and chickpeas until hot.
We serve hot.
