We cut the base with the leaves to the cauliflower and wash it well. We cover the bottom of the pressure cooker with three fingers of water, add the cauliflower and a handful of salt. We cover and when the steam rises we turn off the fire, wait for the steam to go down to open the pot, carefully remove the cauliflower so that it does not dissolve and reserve so that the cooking water drains a little.
We preheat the oven to 180º heat up and down.
Cover the bottom of a baking dish with the fried tomato, add the cauliflower and spread the béchamel on top, then add the ham cubes and the grated cheese.
