Today I bring you a very tasty recipe: how to make cider chorizo with piperrada. The secret of this recipe is, without a doubt, choosing good quality chorizo and cider. Cider chorizo is a culinary preparation of Asturian cuisine that we can take as a cover.

Ingredients for the cider chorizo with piperrada:
2 pieces of chorizo a little dry
250 ml of cider
1/2 red pepper
1 green pepper
Preparation the cider chorizo with piperrada:
Cut the sausages into approximately 2 cm slices, put them in a saucepan and cover with the cider. And let the sausages cook for about 10 minutes. We will know that they are when the cider has halved or the sausages are tender.
For the piperrada: Wash and finely chop the peppers and onion. In a frying pan we put a little oil and when the oil is hot we add the onion, the green and red peppers. We season. We let them be done.
Plating of chorizo in cider : put the piperrada in a clay pie plate and place the sliced sausages on top and sauce with the juice obtained from cooking the sausages with the cider.
Another tip if you have leftover chorizo broth in cider, you can do what in Vitoria (Alava) is called a spotted omelette, which is a potato omelette that they sprinkle over a little of the chorizo broth in cider, impressive.
