Today I have made a very rich little rice. I have left the sofrito prepared and when we have returned home, after a good walk, I have finished it. It is done in a trick.
- 500gr chicken cut into pieces
- Half sweet onion
- An Italian green pepper
- A garlic clove
- Three tablespoons of fried tomato
- Three tablespoons minced roasted red pepper
- 320gr of rice
- 2.5 times the measure of water rice
- One teaspoon of ground cayenne
- A pill of avecren (optional)
This time I added the hot roasted peppers and I also added a teaspoon of ground cayenne pepper. Other times I use normal roasted peppers and you can do without the cayenne, although it gives it a touch.
We salt and brown the chicken and reserve, add the well-chopped onion along with the garlic, let it brown slightly and add the green pepper, continue to stir, add the chicken, the fried tomato, the red pepper and a little pepper. Finally we add the rice, mix everything well and add the hot water, the crushed avecren tablet and the teaspoon of ground cayenne.
When it boils, add the saffron and parsley. We rectify with salt and let it cook for about 5 minutes, stirring occasionally over moderate heat.
Then we put it in the oven at 200º C 15/20 minutes, it depends on the oven. It is removed we cover with a clean cloth and let it rest for about 2 more minutes. And ready, everyone at the table.
