Ingredients (4 people):
– 2 black pudding with onion and pine nuts – 2 small apples – 3 medium eggs – 250 gr of liquid cream for cooking – 50 gr of butter – 2 C. s. of sugar
We preheat the oven to 200º.
We wash the apples, remove the core, peel them and cut them into wedges.
Add the butter and apples to a frying pan and cook over medium heat until tender, add the sugar, cook until golden and reserve.
With scissors we cut the skin of the blood sausages, we remove the filling, we add it to the pan in which we have cooked the apples and we cook it until it is hot and loose. We reserve together with the apples.
Add the cream, the eggs and a little salt to a bowl and stir with a fork without beating until everything is well integrated. Next we add the black pudding to the 1st bowl and continue stirring until it is integrated into the mixture and then the apple pieces.
We add the mixture to a rectangular mold, type plum cake (my glass of 25 by 12 cm), previously greased with a little melted butter, put in the oven and cook for 25/30 minutes, the time will always depend on the oven , our cake will be done when you stick it with a toothpick, the toothpick comes out dry.
We can take the warm or cold cake or cook it the day before and reserve it in the fridge until we are going to consume it.
