Ingredients (4 people):


– 1 octopus of 2 kilos minimum clean
– White wine
– Beer
– Extra virgin olive oil
– The juice of a large lemon
– 4 bay leaves
– Pepper
– Salt

Elaboration:


The first step is to freeze the clean octopus for at least 4 days so that the fibers are broken and it is not hard to bake. After that time, we defrost it in the fridge (better from one day to the next).

When we have the thawed octopus, preheat the oven to 200º.


We put the octopus in a dish suitable for the oven with the suction cups up and cover it with white wine and beer in equal parts, add salt and pepper to taste, the lemon juice, a splash of olive oil and the bay leaves .


We put the octopus at half height in the hot oven and cook it for about an hour or an hour and a half, the time depends on the oven, without going over it so that it does not stay dry. During the baking time we will open the oven from time to time to water the octopus with its own cooking broth and to check that it has not run dry, in the event that the broth evaporated we would add more white wine.


To check that our octopus is done, we will prick it with a wooden toothpick or skewer (it is important that it is made of wood so that the octopus does not harden), if it is tender, our octopus will be ready.


We take the octopus out of the oven, let it cool down a bit, cut it into tacos and serve it accompanied by lemon to squeeze it on top when you eat it.
