Avocado, Salmon and Prawn Salad

Ingredients (4 people):


– 1 large avocado that is not ripe
– 2 red tomatoes
– 150 gr of smoked salmon
– 12 cooked prawns
– 1 cooked egg white
– 1 carrot
– 2 c.s. light mayonnaise
– Substitute for black caviar
– Salmon roe
– Extra virgin olive oil
– Salt

Elaboration:


Grate one of the tomatoes and the peeled carrot in a bowl and add olive oil, salt and the 2 tablespoons of mayonnaise.


We wash the remaining tomato well, we remove the core and seeds, cut it into small cubes, and we reserve.

Peel the prawns, chop them together with the salmon and the egg white, and reserve.


Next we peel the avocado, cut it into cubes and we add it to our tomato bowl, along with the rest of the ingredients that we had reserved.


Carefully stir from the bottom up so that all the ingredients mix well and add the caviar substitute and the salmon roe, stir a little more and let the salad cool for a couple of hours in the fridge.


We serve accompanied by toasted bread or filling some tartlets.
