Artichokes with Ham, Chanterelles and Foie

 

Ingredients (4 people):


– 2 cans of artichokes (approx. 500 gr)
– 2 medium tender onions
– 150 gr of serrano ham in taquitos
– 3 medium chanterelles
– 20 gr of foie Mi-cuit
– 3 tablespoons of pine nuts
– Olive oil
– Salt


Elaboration:


We wash the chanterelles very well with cold water, dry them well with a kitchen paper, cut the base, cut them into thin strips and reserve.


Peel the onions, cut them into julienne strips and reserve them together with the chanterelles.
Then drain the artichokes well and cut them into quarters.


We cover the bottom of a frying pan with olive oil and when the oil is hot add the onion, chanterelles, artichokes, pine nuts and a little salt. We fry over a high heat first and then half stirring from time to time so that they do not burn us. When the artichokes and onion turn golden (they will take about a quarter of an hour to cook) we add the ham cubes and continue cooking for 1 more minute.


To finish, grate the foie on top and mix carefully.


We serve hot and accompanied by toasted bread.
