Delicious recipe of anchovies stuffed with piquillo peppers in batter and fried ideal for any time of the year.
Anchovies can be breaded, stuffed, roasted, in vinegar.
The only drawback I see is cleaning them which can be a bit annoying, but the result is worth it.
Regarding the Piquillo pepper, it is a small pepper and they roast it before being packed. Its main use due to its shape is to make it filling (cod, blood sausage, minced meat, seafood, tuna, etc.), but I personally give it other uses, such as in this case, which I have used to fill the anchovies.
In case you don’t have piquillo pepper can be made with bell peppers.

1/2 kg of anchovies
4 piquillo peppers
Preparation of anchovies stuffed with piquillo peppers:
First what we will do is clean the anchovies, you can also find them in fishmongers and in the supermarkets the fish section, already clean.
To clean we will first remove the head we put the finger inside the anchovy and remove the guts and once opened, remove the thorn. We wash them and let drain.
We put a little salt to the anchovies, and cut the peppers into strips, and we are putting a strip of pepper in an open anchovy, which we will cover with another as if it were a sandwich.
We will pass them first through the flour and then through the egg, and fry in abundant hot oil.
We remove them once fried and drain them on absorbent kitchen paper and serve, we can serve them plated or in the form of a lid.
