Quick and easy recipe escarole pizza
Esacrole pizza : typical dish of classic Neapolitan cuisine. It is usually prepared (traditionally) on Christmas Eve, to be consumed for lunch. But often it is also prepared for Monday in Albis, for the traditional trip out of town.
Ingredients for a 26 cm pizza
- 2 endive (curly or smooth)
- 2 tablespoons of black olives,
- 3 tablespoons of capers
For the dough:
- 925 g. of flour 00
- 5 gr of brewer's yeast (1/5 of a cube)
- ½ liter of water
- 1 teaspoon of salt
How to make Neapolitan-style scarole pizza
For the pizza dough use a large glass container: dissolve the yeast in half a liter of water (a little warmer if it is winter and cool if it is summer), add the flour, salt and knead for about ten minutes, leave to rest in the inside the glass container for 3-4 hours, covering with a cloth.
Prepare the stuffed with escarole: in a large pot half filled with water, blanch the leaves of the escarole previously rinsed under running water for about ten minutes, drain and put them in a pan with 4 tablespoons of extra virgin olive oil, a clove of garlic and the capers
(the classic Neapolitan recipe of escarole pizza also includes pine nuts, raisins, and anchovies, but I like it without), when the garlic is golden remove it and add the escaroles, add salt and cook for 10-15 minutes until they are completely cooked but still crunchy, in the last minutes of cooking add the pitted black olives, let the escaroles cool for a few minutes. Roll out the pizza dough thin enough otherwise there will be a lot of crumb (3-4 mm thick) and arrange it in a previously greased pan, spreading the edges on the wall of the pan,
add the escarole,
and cover with the other disc of pizza dough (slightly smaller) close everything using the edge of the lower disc,
brush the surface with extra virgin olive oil and add salt. Bake at 180 ° -200 ° for 40-50 minutes, taking care not to burn the surface ... Buon Appetito !!!
