Quick and easy lasagna spinach and ricotta

Spinach and ricotta lasagna: one of the many ways to prepare lasagna, it has a delicate flavor and is not too caloric (of course if you add the béchamel things will change!) You can add or not the chopped ham in the various layers, I prefer it this way, try it to add chopped walnuts in the middle layer.

Ingredients for 4 people

  • 12 rectangles of pasta for lasagna
  • 450 gr. frozen spinach (weighed while still frozen)
  • 250 gr of ricotta
  • 3 tablespoons of Parmesan
  • 150 gr of mozzarella
  • 2 slices of raw ham
  • milk
  • salt
  • butter
  • nutmeg

How to make spinach and ricotta lasagna

In a pot with salted water (boiling), dip the frozen spinach cubes and cook for 5-6 minutes (same procedure for fresh spinach) then drain and press with a spoon to let the excess water go down.

Keep the cooking water of the spinach warm. Blend them coarsely and then add the ricotta, the cheese, a grated nutmeg, two pinches of salt and a drop of milk. Turn and set aside

Drop the sheets of pasta into the cooking water of the spinach one at a time, let them rise to the surface and cook just for a minute, spread them out on a plate, but don't put them on top of each other otherwise they stick! At this point, take the ovenproof dish, spread a little butter on the bottom and a little spinach cream and start placing the sheets, creating the various layers as follows: sheet, then the cream, then the slices of mozzarella, then parmesan, pieces of ham,

create another layer, if you like it higher make 3 layers and spread the spinach cream so without exceeding otherwise for these quantities it is not enough, otherwise create 2 layers with more cream. For the last layer, sprinkle with the cheese and put a few pieces of mozzarella in the 4 corners, lifting the sheets, add a drop of milk to prevent it from drying out too much during cooking. Bake for 20 minutes at 180 °, when a crunchy crust has formed turn off the oven, let it cool a bit, serve and… GOOD APPETITE !!!
