Pasta with mixed vegetables: I eat this pasta when I go to the "Fratelli la Bufala" in the menu you can find it with the name "Paccheri" in fact I used this type of pasta too .... it is really a simple but good dish ... try it!
Ingredients for 2 people
- 1/2 yellow pepper
- 1/2 eggplant
- 1 courgette
- 1 can of round hill tomatoes
- 180 gr. of pasta (I used paccheri)
- extra virgin olive oil
- Grated Parmesan cheese
How to make Pasta with mixed vegetables
cut the vegetables into pieces of the same size, put everything in a pan with 2-3 tablespoons of oil and cook for a few minutes without a lid and then with the lid on for another 4-5 minutes, remove from heat and set the vegetables aside,
using the same pan, cook the tomatoes, add a drizzle of oil and salt
after 7-8 minutes of cooking, add the vegetables, cover and cook for another 7-8 minutes
turn off the heat, add the grated Parmesan cheese and cover with the lid, in the meantime cook the pasta, when cooked, add the pasta to the pan with the sauce, turn and serve
and your pasta with mixed vegetables is ready… enjoy your meal!
