Linguine with clams simple and quick recipe
Linguine with clams (or spaghetti with clams according to taste), is certainly the simplest of the recipes that use seafood, and simplicity has never been so good! It is the perfect first course for a fish-based lunch, a typical irresistible dish.
Ingredients for 2 people
- 400 gr. clams (or clams and lupins or just lupins)
- 180 gr. pasta (spaghetti or Linguine)
- oil
- salt
- chili pepper * optional
- parsley

How to prepare Linguine with clams
Put the clams in a container with water and a little salt and let them drain for about an hour. Rinse the clams discarding the broken ones.
In a pan put a clove of garlic, the chilli (I put chilli powder), and the oil; let it fry until the garlic has turned golden, pour in the clams and cover with the lid for a couple of minutes, until they are all open, pour a drop of white wine and let it evaporate for a minute,
turn off the heat under the pan and cover.
In the meantime, you have cooked the Linguine or Spaghetti in abundant salted water for one minute less than the cooking time indicated on the package, drain and turn the heat back on under the pan with the clams,
pour the linguine into the pan and leave to flavor over high heat by turning the pasta, add the parsley, serve and… ..GOOD APPETITE !!!
WINE PAIRING: This dish goes well with Wine White medium-bodied, also Sparkling wine in particular with wines produced in Sicily for example Alcamo Ansonica Doc or an Erice Chardonnay Doc would be fine.
