Salted Zeppole di San Giuseppe. Quick and easy recipe
Salted Zeppole di San Giuseppe: the dough for the donuts is the same as the sweet ones, in fact, since there is no sugar, these donuts can also be used as sandwiches, for dads who prefer salty to sweet or for party buffets these donuts are perfect. You can stuff them with whatever you prefer, I went for the classic with mozzarella ham, cherry tomatoes, rocket and a little mayonnaise to decorate (where the custard is used for sweet donuts). Try it!

How to make salted Zeppole di San Giuseppe
Make the zeppole di San Giuseppe in the oven as described in the sweet version.
Once cooled (you can easily prepare the zeppole the day before and stuff them if necessary) cut the lower part of the zeppola in correspondence with the circle at the base made with the sac à poche. The inside of the zeppole is hollow and hollow, perfect for holding the filling. I put the ham on the base in order to isolate the wet ingredients that could make the zeppola too wet), then the cherry tomatoes and mozzarella cut in half (dry the surface of both the cherry tomatoes and mozzarella with absorbent paper a little), add a few salad leaves and if you want the other half add a little mayonnaise to make the two halves adhere better, close the sandwich.
With a pastry syringe make the typical tuft of zeppole, using mayonnaise (or splamabile cheese).
Garnish with 1 small tomato, or with 1 olive or capers. And your salted zeppole di San Giuseppe are ready. Enjoy your meal!
NB The zeppole have an almost neutral taste as there is no salt or sugar in the dough. It is the filling that gives it flavor. You can indulge yourself using pate, chopped pistachios, walnuts, soft or aged cheeses, salami, cooked ham, cucumbers and aubergines in oil. What you prefer and what you have in the fridge!
