Savory pie with ham and peas : also called "quiche", the savory pie is one of the fastest ways to prepare a delicious recipe that can be stored and served several hours later. I often prepare them in this version I use shortcrust pastry, but puff pastry is fine too. The filling with ricotta, peas and cooked ham is a guarantee, everyone really likes it!

Ingredients for a 24 cm diameter cake pan
- 1 roll of shortcrust pastry
- 100 gr. of sweet provolone (not very fresh fior di latte is fine too)
- 100 gr. of diced cooked ham
- 150 gr. of peas
- 2 tablespoons of grated Parmesan
- 300 gr. of ricotta
- 1 egg
- salt and pepper
How to make the ham and pea savory pie
Cook the frozen peas in boiling salted water for 7-8 minutes. Drain and set aside.
in a bowl put the ricotta cheese, L'egg, 1 tablespoon of cheese Grated Parmesan cheese, salt and pepper and turn to create a cream.
Add the peas, the Ham diced and the cheese cut into cubes (I used the fior di latte of the day before, stored in the fridge - otherwise the fresh one releases too much milk during cooking!), turn.
Line a baking sheet with the roll of pasta brisee, leaving the parchment paper already in the package, prick it
pour the pea and ham filling over the shortcrust pastry, level the surface, add a little pepper and Parmesan, fold the edge on itself, cut the excess parchment paper.
Bake at 180 degrees for half an hour by placing the aluminum foil on the savory pie when the edges begin to brown, and removing it for the last 5 minutes to complete cooking. Your Savory pie with peas and ham is ready..Good appetite!
