Light penne with peas and mushrooms: here is a tasty recipe that with a few tricks also manages to be light. Just do not overdo it with the condiments and with some tricks you can avoid a lot of calories. Try it!

Ingredients for 2 people

  • 180 gr of smooth feathers
  • 200 gr of peas
  • 100 gr of mixed mushrooms (I used the frozen ones)
  • 2 tablespoons of oil
  • salt and pepper


How to make light Penne with peas and mushrooms

Tricks to make the plate lighter: in order not to exceed the calories it is important that the type of penne used are smooth and not striped (pasta rigate, but also spaghetti and linguine, absorb much more seasoning and therefore more oil and for the same reason when cooking peas add a few tablespoons of water.

Proceed with cooking the peas and mushrooms: put in a pan 2 tablespoons of oil, less than 1/4 of the chopped onion and the peas (fresh or frozen), add the mixed mushrooms and cook for a few moments, add a little of salt, after a couple of minutes add 2-3 tablespoons of water, cook for 7-8 minutes with the lid on and then let the water evaporate by removing the lid. Set aside the peas with mushrooms.

Cook the pasta and drain it one minute before the indicated cooking time. Pour the pasta into the pan with the mushrooms and peas, if too dry, add a little cooking water and turn everything. Serve and add a little grated Emmental, just a teaspoon for each dish… it will give a greater taste but without exceeding the calories.
