Flower cake with ricotta and spinach (in the shape of a sunflower): this savory pie is one of the catchphrases of recent years and is often seen on the web, it is a very original way of presenting a savory pie with ricotta and spinach (in this case) but it is possible to make it with the filling which you prefer, even sweet. Shortcrust pastry and brioche pastry can also be used. It is perfect for example for Easter lunch or Easter Monday outing, a way to give life to a new tradition. Try it!
Ingredients for a savory pie
- 2 rolls of puff pastry
- 300 gr of spinach
- 400 gr of ricotta
- 2 whole eggs
- salt and pepper
- 50 gr of pecorino romano
- 50 gr of Parmesan
- sesame (or poppy) seeds
For external gilding
- 1 yolk
- 2 tablespoons of milk
How to make a flower cake with ricotta and spinach
Wash and clean the spinach, put them in a pan and sauté them with half a glass of water for 7-8 minutes, add salt and set aside. Let cool and pass them to the mixer to chop them lightly
In a bowl, mix the ricotta, 2 eggs, cheeses, salt and pepper, drain the spinach well, add the spinach to the ricotta and mix everything together.
unroll a roll of puff pastry, line a baking sheet with parchment paper, and lay the pastry on top, put a little filling in the center and then with the remaining filling create a circle as in the photo, (I used a sac à poche) leave one cm free from the edge,
cover with the second roll of pastry, place a cup on the central filling, make the edges adhere by moistening with a little water, seal with the tines of a fork all around.
Start creating the wedges by first making 4 cross cuts, and then for each of the four sections create another 5 wedges, in total then there will be 20 wedges that will be the petals of the flower. Turn each wedge by 45 ° in order to position the visible filling upwards.
At the end remove the cup, brush with the beaten egg yolk together with the milk, and add the sesame (or poppy) seeds. Bake in a hot oven at 200 ° for 20-30 minutes. Or at least until the outside is golden. And here is your flower cake with ricotta and spinach ready. Enjoy your meal!
