Ricotta and spinach savory pie quick and easy recipe
Salt cake with Ricotta cheese and spinach : puff pastry is very versatile, it is used for desserts but also for savory pies, I buy the ready-made one, it is easier and faster to buy it already made! This cake is very simple.

Ingredients for a 24 cm diameter cake pan
- 1 roll of puff pastry
- 200 gr of spinach
- 200 gr. of cheese I used the Emmental
- 250 gr. of ricotta
- 1 egg
- extra virgin olive oil, pepper
- 2 tablespoons of grated Parmesan or pecorino

How to make the ricotta and spinach savory pie
Cook the spinach in a pan with a drizzle of oil; remove from heat and keep the spinach aside.
In a bowl put the egg, Parmesan, salt, pepper and turn (as for an omelette),
then add the ricotta and finally the spinach turn until the mixture is uniform.
At this point line a pan with the puff pastry leaving the parchment paper already in the package, make the dough adhere to the walls of the pan pierce the puff pastry with the tines of a fork and without cutting away the excess dough then pour the mixture in the pan, level the surface and with the excess dough create a border by folding inwards, add the cheese cut into slices creating a decoration or insert it inside the dough.
Bake in a preheated oven (at least for 10 minutes already), at 180 ° for 30-40 minutes in the central level of the oven, checking the cooking often (cover the surface with a sheet of aluminum foil if you see that it begins to take too much color). Wait for it to cool down and ... HAVE A GOOD APPETITE !!!
