How to make the Greek Tzatziki sauce
Grate the cucumber with a grater with large holes or cut them very thinly with a vegetable cutter. Put the grated cucumber in a colander for half an hour to remove the water contained, mash with a spoon and add salt.
Also grate the garlic (1 and a half without the core), put the Greek yogurt, the finely chopped garlic, a few drops of lemon or vinegar, the chopped cucumber, a tablespoon of extra virgin olive oil in a bowl, adjust of salt and stir, if you have some dill leaves add it (I did not find it).
And your Greek tzaziki sauce is ready, which you can keep in the fridge for a few days. You can serve it as an accompanying sauce for meat, fish for dipping fennel or celery, or to flavor gyros pita. ENJOY YOUR MEAL!
WINE PAIRING: The presence of yogurt excludes thepairing of the plate al wine.
In this blog for wine pairings I have consulted the site most of the time: www.bodegasdevino.org
