Quick and easy cabbage rolls with sausage

Cabbage rolls with sausage: during a healthy fit at the supermarket I bought the cabbage ... but then I didn't know what to do with it .. rice with cabbage? Uhmm I didn't like it, I recovered two more ingredients from the fridge a bit and here's a quick and easy recipe and surprisingly good!

Ingredients for 2 people

  • cabbage (1 large leaf for each roll)
  • 3 large or 5 small sausages
  • cheese (I used Emmental, but a spicy cheese is fine too)
  • salt and
  • extra virgin olive oil

    How to prepare cabbage rolls with sausage

    Choose from the cabbage 2 tender and fairly large leaves (not the external ones that are too hard), wash and blanch for 3-4 minutes in boiling salted water,

    when you lift them, be careful not to break them; put them on a clean and dry cloth to absorb excess water, spread them out and let them cool (remove the hard part of the leaf if it is too big as in my case or if it is still too hard) .In the meantime, remove the skin from the sausages , crumble them and put them in a pan,

    without adding oil, cook them over medium heat for 5-6 minutes, until they have reached a golden color, let them cool for a few minutes, and start composing the rolls, take a few spoonfuls of crumbled sausage, add a few pieces of cheese ( the cheese you prefer as long as it is not seasoned),

    also add some grated Parmesan cheese if you like) close the roll by folding from the base of the leaf, then fold the side inwards

    and finally wrap the rest of the leaf. If you see that the leaf could open during cooking, or it turns easily, then close it with some toothpicks, or with kitchen wire (in my case it was enough to put the extreme edge of the leaf facing down inside the wheel), then place the rolls in a baking dish or in a non-stick oven wheel, a drizzle of oil, a little salt on the surface
