Puddle roll with escarole: pizza with escarole is one of my favorite pizzas, in Naples it is a dish that is not lacking on the tables at Christmas time, but I often prepare it in this more practical version to serve and if you have more guests you can prepare two to bake together . Try it!
- 200 gr. of pizza dough (or a ready-made roll)
- 1 sweet escarole
- 10 black olives
- a handful of capers
- extra virgin olive oil
How to make the pizza roll with escarole
Wash the leaves of the escarole, break it with your hands, bring the water to a boil and cook for 6-7 minutes, drain the escarole. In a pan, fry a clove of garlic then add the capers and finally the escarole, cover and cook for 10 minutes and finally add a pinch of salt and the pitted black olives.

spread the escarole on the pizza dough, add a drizzle of oil, wrap the dough on the long side and close the side flaps inwards
Arrange the filled pizza roll in an oiled baking pan, brush the surface of the roll with oil and bake at 220 ° in a preheated oven for about 20 minutes until the surface is golden, cover with a cloth from the kitchen to soften and not to disperse the heat, serve after 10 minutes
