Meatloaf stuffed with peppers a tasty and easy to make recipe. It is an excellent second dish to be enjoyed both hot and cold, in this version there are peppers that everyone in the family likes a little. On the site you will find the meatloaf also stuffed with green beans and stuffed with spinach.

Ingredients for 4 people
- 400 gr of minced meat of your choice
- 3 slices of loaf bread + milk
- 100 gr. of cheese (Scamorza, Galbanino or Emmental)
- 2 peppers (red and yellow)
- 1 egg
- 1 spoon of Parmigiano Reggiano and 1 of pecorino
- salt
- pepper

How to make stuffed meatloaf with peppers
Cut the peppers into strips after having washed them and deprived them of the core, seeds and internal white part (it is bitter). Fry a clove of garlic in a pan, when it becomes golden remove it and put the peppers in the pan, add salt and cover with the lid, cook the peppers for 20 minutes, until ready.
Put 3 slices of carrè bread in a saucer with some milk, let the milk absorb for a few moments and squeeze the slices of toast to create wet crumbs, chop them and put them in a large container together with the minced meat, the egg , parmesan, pecorino, parsley, garlic powder (not essential), salt
Work all the ingredients with your hands for a few minutes, in order to obtain a soft and compact dough.
Spread the meat on a sheet of parchment paper, cover with another sheet and with a rolling pin create a reactangle about one cm thick, flatten and level,
lay the peppers (the oil that is left over in the pan, keep it, you will need it later) and the cheese (I used Emmental)
with the help of parchment paper wrap the meatloaf on itself, close the flaps and the tips well to prevent the milk from the cheese from coming out of the inside and opening. Grease a baking sheet with pepper oil, cover the meatloaf with breadcrumbs and put a few flakes of butter on the meatloaf (or spread oil on the meatloaf, preferably the cooking oil of the peppers).
Put in a preheated oven for 40-45 min at 180 °, covering with parchment paper for 30 minutes and the last 15 without parchment paper ... cut into slices and serve your stuffed meatloaf in the oven ... a good side dish could be a mashed potatoes or baked potatoes and .... GOOD APPETITE !!
