Lemon cheesecake with berries: a sweet recipe for Valentine's Day. This year for Valentine's Day I decided to prepare this cold Cheesecake with lemon cream and berries, strawberries are also good but it is not yet the time! Perfect, if you find them, are the wild strawberries! I recommend you try this very simple dessert to prepare! Ingredients for a 22 cm cake pan
- 180 g of digestive biscuits
- 80 g of butter
- 400 g of Philadelphia Classico in a stick (5 sticks)
- 200 ml of fresh whipping cream
- 100 g of powdered sugar
- 10 g of isinglass
- 1 lemon
- 100 g of mixed fruit in cubes
How to make lemon cheesecake with berries
Cut a circle of parchment paper of the same size as the base of the pan, then also create strips of the same width as the pan in order to completely line the pan, grease it and make the parchment paper adhere.
Prepare the base of the cheesecake: blend the biscuits and pour over the melted butter, turn to absorb all the butter.
Spread the mixture on the base of the pan, which you have previously greased and lined with parchment paper. Make the base compact with the help of the back of a spoon.
Leave it in the freezer for at least 15 minutes, or in any case for the entire duration of the preparation of the cheesecake.
Soften the isinglass by letting it soak in plenty of cold water for at least 10 minutes.
Meanwhile, for the cream, place the Philadelphia loaves in a bowl and beat them with 40 grams of powdered sugar, together with the grated lemon peel and the juice of half the fruit, and a few teaspoons of limoncello (if you don't have it does nothing) until you get a smooth and soft cream.
In another bowl, whip the cream (except for two tablespoons that you will keep aside) and add the remaining 60 grams of powdered sugar.
Heat the two tablespoons of cream that you had kept aside and dissolve in the isinglass well drained and squeezed out of the soaking water.
Add the glue mixture to the Philadelphia cream and then add the sweetened whipped cream, incorporating it gently so as not to dismantle it. Pour the mixture obtained on the base of the cheesecake, level it well and put it in the refrigerator to harden for at least 4-6 hours.
When the Cheesecake is well compacted I generally keep it in the fridge all night, remove it from the mold and garnish it with the fruits of the woods (fresh or frozen), to create the heart shape cut a circle of parchment paper the same size as the Cheesecake , cut the inner heart, adhere the shape thus created on the surface of the lemon cheesecake,
and cover the empty part (of the heart) with berries, after the operation remove the parchment paper from the surface of the cheesecake, and if you want garnish with other blackberries or raspberries.
