Cotechino with lentils quick and easy recipe
Pork sausage with lentils: a classic of the New Year's Eve dinner… .you can like it or not but a little cotechino with lentils must not be missing !!
- 1 cotechino
- 300 gr. of lentils
- broth and salt
How to make cotechino with lentils
Soften the lentils in a bowl with cold water for a couple of hours, changing the water a couple of times. Fry the carrot, celery and chopped onion in two tablespoons of oil and a knob of butter (without browning excessively)
drain the lentils and pour them into the sauté. Cook for a minute and pour in the broth a little at a time (4-5 ladles) cover the lentils and cook for 40 minutes, when needed add more broth.
The lentils will be ready when they are soft and the broth almost completely absorbed. For the cotechino, follow the instructions on the package. I bought a very small one, just to follow the tradition! Slice, serve and serve hot .... and HAPPY NEW YEAR !!!
In Modena, the place of origin of cotechino, tradition has it that it is served with mashed potatoes. But lentils must not be missing for a particularly rich year!
