Anchovy and zucchini pie Quick and easy recipe

Baked anchovy and zucchini pie: here is a perfect dish for the summer, light, economical, fast, effective and above all delicious! It is a perfect second for a fish-based lunch. Anchovies are good and easy to prepare. This recipe is from my mother, a very good cook, she told me she would prepare these pies so I, with my camera in hand, simply watched. If you want to make this dish even more "seafood" you can add a couple of shelled mussels inside the individual pies, we preferred the single-portion pies because the effect is more spectacular, but you can easily make it in a more wide. Try them!

Ingredients for 6 tartlets

  • 30 medium anchovies / anchovies
  • 300 gr. of zucchini
  • extra virgin olive oil
  • breadcrumbs
  • 6 teaspoons of grated pecorino romano
  • 1 clove of garlic

How to make the anchovy and zucchini pie

Wash the courgettes, remove the pistil from the flower. Cut the zucchini into slices of about half a cm, put a drizzle of oil and a clove of garlic in a pan and cook the zucchini in a pan for about 10, 15 minutes, turn off the heat and set aside.

Cut the anchovies in half from the belly side starting from the head to the tail. Remove the entrails, the bone and the head, wash the anchovies with cold running water and immerse them in a bowl with extra virgin olive oil for a few moments.

oil the pies and line them with the anchovies arranged in petals with the tails outwards, 5 anchovies are enough for each pie (6 if they are small), add the grated pecorino romano inside, about a teaspoon for each pie

and finally add the zucchini and the flowers cut into strips, close the pies with the anchovy tails, add a drizzle of oil on the surface and a little more breadcrumbs and very little grated pecorino

Arrange the tortnini on a baking tray and bake in a preheated oven at 200 ° for 15 minutes, until they have assumed a nice golden color on the surface.
